WINE NOTES: A compilation that turns the flavour dial up to 11, this Sauvignon Blanc opens with a mix of driving lemon, current, and fresh herb rhythms.These upbeat flavours harmonise effortlessly with the base notes of mineral imparted by our stony riverbed soils. Bright aromatics; grapefruit, sweet herbs and nettle. Yellow citrus on the palate, with red capsicum and a splash of more tropical fruit. The wine is dry, but not austere. Easy to drink on its own, or to match with food.
VINIFICATION: Winemaking is all about preserving each site’s individual identity, so it’s kept simple. Juices from each vineyard are kept separate, and fermented with an appropriate yeast in stainless steel tanks. Individual wines are then blended according to our idea of a complementary whole.
