VINIFICATION: Grapes from each vineyard are picked as late as possible, when the flavours start to get interesting, without becoming completely over-ripe. Fermentation is carried out in both stainless steel and old barrels. Contact with yeast lees for several months is used to add texture and some layers of creamy flavour.
