VINIFICATION: Hand-picked in ripe condition between 31st March and 19th April. 6 tonne fermenters were used to cold soak the fruit for 3 - 5 days before indigenous fermentation took place peaking at 30°C. This was then pressed off to barrels 10% new, 20% one to two years old and 70% three years old. Aged in barrels until bottling on 12th February 2018.
