WINE NOTES: This medium-sweet, fragrant style is reminiscent of a fresh, ripe apple delicately scented with citrus blossom. There is a lightness and liveliness to the feel of this wine in the mouth. The palate is concentrated and linear beginning bursting with juicy, sweet fruit up front and flowing seamlessly to a refreshingly long finish.

VINIFICATION: The fruit is gently whole bunch pressed and settled before it is inoculated with a low vigour, aromatic yeast and cool fermented. At the point that sugar and acidity come into balance, the wine is chilled to stop the fermentation. The Apple Valley style typically sits somewhere between 35 and 45 grams of residual sugar with alcohol in the lower range of 8.5-10 percent. 2015 was characterised by low yields producing high quality grapes and expressive wines with bright aromatics and flavour concentration. Cool weather over flowering resulted in small bunches with low berry numbers and summer drought conditions meant that bunch weights remained light. Final yields were 20-25 percent down. Harvest began and ended very early, 15 March-5 April Hand harvested March 27-31, 2015 18.6 brix, 3.03 pH, 9.8 g/L TA Processing Whole bunch pressed and enzyme settled Fermentation Inoculated and cool fermented in stainless steel. Fermentation stopped when sugar and acid came into natural balance. No malolactic fermentation.
